Yesterday was the last day of the after school program until nest Wednesday so I wanted to feed the kids very well. I bought 2 spiral cut hams and covered them in maple sugar. Then I poured some maple syrup over them too.
I added 4 cups of pineapple juice and 1/4 cup of dijon mustard and cooked them in a slow cooker for 6 hours. Then I removed the hams and sliced them up and boiled down the liquid to half it's volume and poured it back over the ham slices. The kids ate every last bite.
I also made them a side dish that they flipped out over. Mississippi Mud Potatoes. For 1 recipe you cut up about 10 red potatoes, add some fresh chives, 1 box of cream cheese, 1 cup of sour cream, 3/4 cup of mayonnaise, 1 block of grated cheddar cheese, 1 pound of cooked, diced bacon and salt and pepper.
You can sprinkle more cheese on it before serving.
I also made them potato rolls to go with the dinner. Some of the kids made ham sandwiches with them.
I also made them a big Easter basket filled to the brim with treats which made them very happy. And I forgot to take a photo of it.

Mix it thoroughly, put it in a baking pan and cover it with foil. Bake at 375 degrees for 1-1/2 hours. |
