Pancakes

When The Blog Tech's kids hear that we are going to maple festivals, they get really excited because they know that pancake day is close.  They LOVE pancakes.

So yesterday, I cracked and measured and stirred and made 125 pancakes.  It's amazing how something so simple becomes so complicated when you are making so many.       I went through lots of butter, vanilla and farm fresh eggs.                                                                         
 Here is the recipe:

3/4 cup of buttermilk
1 cup all purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons melted butter
1 teaspoon vanilla
  Mix all of the dry ingredients and set aside.  Mix the liquid ingredients and stir into the dry.  Do not over mix. Let the batter sit for about 15 minutes before cooking.

I sent these along with a gallon of maple syrup.

I've decided that instead of the traditional easter food we always have I'll have pancakes instead. I never tire of them so I thgink I can have it all four easter days without getting tired of them :-)

Those look yummy. I usually put preserves on mine. But that syrup sounds good.
