The Best Turkey Sandwich

I made these sandwiches for my family the other day.  They are killer good turkey sandwiches.


 I brined and roasted a turkey breast first.


 This is so much cheaper than buying roasted turkey breast in the deli and a hundred times better.


 I got almost 3 lbs. of breast meat out of it.

You can use any kind of cheese you like but I think cheddar and blue works well.  I used a blue cheese spread I had made. I assembled these on  the pumpkin bread I posted yesterday.

 You can add sprouts which are very good but I had none and I was out of tomatoes too.  I used thinly sliced red onion, slices of Honey Crisp apples and crunchy leaf lettuce.  I also added mayo and Dijon mustard.


 These pics are from the last time I made them.  They are really good with homemade pickles too.


I used the carcass from the turkey breast and made some very rich stock that I froze and will use to make gravy for Thanksgiving. The W's got some tasty morsels from the roast too.

I cannot eat cheese with poultry. It just doesn't taste right to me. But slices of apple with turkey? YUM!

Like turkey sandwiches at au bon pane ( probably spelled wrong) I love cheese spread with turkey . Unfortunately husband only likes turkey on his sandwich so not worth the effort. Yours look delicious, mouth watering over here.

You are thinking of thanksgiving on the fly as always. Yesterday, I made three loaves of bread dough, bagged them in Foodsaver bags and froze them. I'm trying to get ahead of the game this year. So far I have canned six bottles of cranberries with orange zest and pecans, I blanched peas, 16 corn on the cob, and a ton of green beans and packaged them up in freezer Foodsaver bags in portioned sizes. Everything is in the freezer for when I don't really feel like cooking. I just pop the bags in boiling water and then serve. Life in the kitchen is so much better..

Oh I'm sure the W's were very happy! Ours got stuffing scraps last night and again for lunch today! That sandwich looks so delicious!

Did you use the same brine recipe for just the breast that you used for an entire turkey? I was going to try the one you posted a while back...it looks really good!

Another question about how to cook a turkey breast -- did you coat it with butter to get that great brown skin? Herbs? Brine it first? That sandwich looks magical!

i do use the same bring. you can find it by typing it into my search bar. it is my go to poultry bring...just excellent! to answer the other question, the brine makes the breast turn the dark beautiful color as it roasts. another good reason to always brine. i pull the skin off and use it when i make the stock. it really adds flavor and color.
