Platzkuchen Recipe

This is a good dessert to use up any extra fruit you have on hand. I used some of the peaches I recently harvested. Preheat your oven to 350 degrees. Spray a 9x13 pan with cooking spray. I also lined it with parchment paper. In the bowl of your food processor, measure out 1 cup of flour, 1/2 cup of sugar, 1 tsp. baking powder and 1/4 cup of butter. Pulse until the mixture is crumbly. Add 1/2 cup of milk, 1 egg and 1 tsp. of vanilla. Then pour this into the prepared pan.

Top the batter with any kind of fruit you want to use. Then add 1 1/2 cups of flour, 1/2 cup of melted butter and 1 1/2 cups of sugar to the bowl of the food processor and pulse until crumbly.

Sprinkle this mixture evenly over top of the fruit and batter. Bake in the top 1/3 of your oven until golden, approximately 30 minutes.

You can see that the fruit will just barely show through in some areas.

To cut the richness, you can always top it with a scoop of vanilla ice cream!!!

This looks yummy and vanilla ice cream would be perfect.

Happy Day and xoxo to "Teddy Red Fluffs".

P.S.: When you have a moment please stop my my new blog, you can go there from "the wild magnolia".

I wrote a little snippet poem about tea parties, friends, the two teddy's and jumbleberry jam. Inspired by Kary's post at "My Farmhouse Kitchen".

Kary and I decided it would be great fun for you, Kary and myself and the two teddy's, to have tea and eat jumbleberry jam and laugh ourselves silly!

thanks, sandi

Am I correct in thinking that "platzkuchen" simply means "square cake"? Sounds more exotic in German! Looks de-lish!

I've heard of apple kuchen and my wife thinks we still have the recipe somewheres maybe in an old cook book. Isn't this German?

Ai, ai... It looks so yummy and easy to prepare! The only way for me to eat peaches is like this, in cakes or pies.

Kisses!
