This is a good dessert to use up any extra fruit you have on hand. I used some of the peaches I recently harvested. Preheat your oven to 350 degrees. Spray a 9x13 pan with cooking spray. I also lined it with parchment paper. In the bowl of your food processor, measure out 1 cup of flour, 1/2 cup of sugar, 1 tsp. baking powder and 1/4 cup of butter. Pulse until the mixture is crumbly. Add 1/2 cup of milk, 1 egg and 1 tsp. of vanilla. Then pour this into the prepared pan.
Top the batter with any kind of fruit you want to use. Then add 1 1/2 cups of flour, 1/2 cup of melted butter and 1 1/2 cups of sugar to the bowl of the food processor and pulse until crumbly.
Sprinkle this mixture evenly over top of the fruit and batter. Bake in the top 1/3 of your oven until golden, approximately 30 minutes.

You can see that the fruit will just barely show through in some areas.
To cut the richness, you can always top it with a scoop of vanilla ice cream!!!
