I love following Joy at: http://myturkishjoys.blogspot.com . What an exciting life she lives! And she has great recipes. She posted this one for Balinese chicken noodle soup and I just had to make it. It is fantastic. You can make it as spicy or mild as you like.
You need some hot peppers. I used jalapenos because I did not want my soup to be too spicy. You need turmeric, shallots, lemon grass, cilantro, Thai basil, garlic, green onions, brown sugar and fresh ginger.
Place 1/2 cup of garlic in the bowl of your food processor, add 3 tablespoons of brown sugar, 2-3 hot peppers, 2 inch piece of peeled ginger, 2 teaspoons of turmeric, 4 tablespoons of blanched almonds, and 2-3 pieces of lemon grass. Pulse until it turns into a rough puree'.
Joy uses galangal but I was unable to find it. If you can get your hands on some, add about 3 tablespoons of it.
Add 1/2 cup of the spice mix to a few teaspoons of oil in a heavy frying pan. Cook over medium heat for about 45 minutes until it turns golden.
This is what it looks like when it is ready.
Store the extra in a jar in your refrigerator.
Add the 1/2 cup of spice to a bit of oil and cook until it releases it's aroma. Add 1 pound of thinly sliced raw chicken meat and saute' for a few minutes. Add a few julienned carrots and 5-6 cups of chicken stock. Add some salt and pepper to taste. Bring to a simmer and cook until the carrots are tender.
Ladle the soup over some al dente noodles, I used Asian noodles. Add fresh bean sprouts. Top with cilantro, Thai basil and green onions. Serve with a lime wedge to squeeze over it just before eating. This is killer good!

Anywho. Perhaps I've been up far too long without enough caffeine.
I can't wait to try this recipe, but I'm going to have to add it to my stash that I'll be able to haul out once I've gotten a food processor again. Hope you're staying warm!
