Snowball Cookies

I am finally done baking. I made 65 kringles this morning. Phewww....it has been a long baking season. This is a recipe for yummy buttery snowball cookies.


Place 3 cups of unsalted butter in the bowl of your mixer.


Add 3/4 cups of confectioners sugar and 3 tsp. vanilla extract.


Beat until fluffy.



Put the paddle on.


Slowly beat in 6 cups of flour. Add 2 cups of finely chopped pecans.



Scoop walnut sized balls and place on parchment covered cooking sheets. Refrigerate for about 30 minutes. Bake at 350 degrees for 12-15 minutes. Let cool for about 5 minutes and roll them in confectioners sugar.

I'm still baking and candy making. Make gumdrops and marshmallows yesterday. Also cardamom palmiers. Today it's chocolate snowballs.

I don't think I need more sweet things for yule :-) :-) :-) But these are delicious!

Do You know there's a butter shortage in Norway. Swedes go over the border and sell butter on the black market for over 500US dollar/ kilo (I think that's around 4 pound) :-) :-) :-)

I just love these kind of cookies and I don't have a recipe for them, umm I didn't. I do now!
Those are the kind of snowballs I want to be hit with!
I'm saving this recipe for my great-nephews wedding, for the cookie table. Great idea, right!

I made these yesterday. They seem to be everybody's favorite in my neck of the woods, along with jam thumbprints. Happy Winter Solstice, days getting longer from now on. xo

That is uncanny! I have some snowball cookies in the oven as we speak, but I just now saw this. Mine have mini chocolate chips in them, though. They make wonderful holiday gifts!

I make these too. I call them Wedding Cakes. Sometimes I use pecans, sometimes chocolate chips. I can NOT believe you are finally finished making cookies. You aren't going to know what to do with yourself. LOL
