I am finally done baking. I made 65 kringles this morning. Phewww....it has been a long baking season. This is a recipe for yummy buttery snowball cookies.
Place 3 cups of unsalted butter in the bowl of your mixer.
Add 3/4 cups of confectioners sugar and 3 tsp. vanilla extract.
Beat until fluffy.
Put the paddle on.
Slowly beat in 6 cups of flour. Add 2 cups of finely chopped pecans.
Scoop walnut sized balls and place on parchment covered cooking sheets. Refrigerate for about 30 minutes. Bake at 350 degrees for 12-15 minutes. Let cool for about 5 minutes and roll them in confectioners sugar.

Do You know there's a butter shortage in Norway. Swedes go over the border and sell butter on the black market for over 500US dollar/ kilo (I think that's around 4 pound) :-) :-) :-)
