Focaccia

I made some Turkish roasted peppers and thought, what better to serve them on but focaccia. This is a quick easy recipe.

Place 3/4 C. water in the bowl of your mixer. Add 3/4 tsp. salt, 2 tsp. sugar, 2 1/4 tsp. rapid rise yeast. add 1 T. diced fresh rosemary. Add 2 cups of flour and knead until you have a smooth dough.

Place the dough in a bowl coated with olive oil, cover with plastic wrap and let rise until doubled. It takes about 1 hour.

Turkish roasted peppers.

When the dough has risen, spread it out into a rectangle on parchment paper. It should be rather thin. Let it sit for 20 minutes.

Just before baking, brush the dough with olive oil, press your fingers all over the top of the dough to make little indentations and then crack sea salt over it.

Bake at 425 degrees until golden. Mine took about 12 minutes. Cool on a rack.

Eat a strip of pepper with each bite. If you want the recipe for the peppers click here. http://octoberfarm.blogspot.com/2011/08/turkish-roasted-peppers.html

I made the last food for the event this morning and The Blog Tech is en route as I type.

I made almost 70 cups of Asian noodle salad.

This stuff is wicked good! For the recipe, click here. http://octoberfarm.blogspot.com/2011/07/asian-noodle-salad.html

That salad does look DELICIOUS. I usually have mhy roasted peppers with grape leaves and NAAN. What is the difference between NAAN and FOCACCIA? They look very similiar to me?

I like focaccia but I've never baked it myself. Perhaps I'll try it before the season to have the fire burning in the stove is over.

Have a great day!
Christer.
I have made the salad before and it is fabulous! I'm making focaccia in about 10 minutes and I have my marinated roasted red peppers from last summer and that is supper tonight. With wine of course. I know the party will be a huge sucess.

Gosh I love focaccia bread! When I lived in CA and worked in Beverly Hills, they had an Italian restaurant that we would often go to for lunch and they had the best bread ever. This reminds me of it.
Can the Blog Tech be trusted to drive everything there without stopping on the side of the road for a quick nosh?
