Buttermilk Blue Cheese Chicken Salad Sandwiches

 I made this salad to serve on my Pan de Mie.  It is made with Wisconsin Buttermilk Blue Cheese.  If you can find this cheese, grab some.  I think it is the best blue cheese I have ever tasted.  We eat it every year after Thanksgiving on our turkey sandwiches.  It takes turkey sandwiches to a whole new level.  I used to only be able to buy it at the Cleveland Market but now I can get it in my grocery store.


 Dice several stalks of celery and 1 large onion.  Add about 1/3 to 1/2 C. of mayo, 2 tsp. of Dijon mustard and some salt and pepper.  Slice in half 1 C. or so of green grapes.

 Squeeze the juice of 1/2 lemon.

Add about 4 oz. of blue cheese.

Mix it together and taste for seasoning.

I served this on my homemade bread but it is also good wrapped in a tortilla.

I am so hungry seeing that wrap and those strawberries. I will definitely be searching for someplace to buy your Wisconsin Buttermilk Blue Cheese. Anything that kicks a turkey sandwich up a notch, is worth having on hand. take care. I LOVE chicken salad though. YUM.

Sounds like something I would have liked right now :-) I'm home after visiting my mother and have very little in my fridge :-)

I doubt I can find that blue cheese here but we do have some rather good danish ones instead. The Danes are good at making blue cheese, we swedes not so much to be honest :-)
