Christmas Kipple Recipe

 Yesterday was kipple baking day.

 This is another recipe I have in my mother's handwriting.  Though stained and wrinkled, it is much loved.  I can barely remember her but somehow I feel a connection when I make her recipes.  I alter hers a bit.  I only use butter not margarine.  You can find it here:  http://octoberfarm.blogspot.com/2009/12/favorite-christmas-cookies.html

The dough for this is much like a brioche dough.

It calls for lots of butter and egg yolks.

It is a wonderful dough to work with.

The filling consists of 4 cups of ground walnuts mixed into 1 cup of water which has been boiled with 2 cups of white sugar. Temper 2 eggs and mix them into the nuts with 1 tsp. of vanilla extract.  Simmer stirring until the nuts thicken.  Set aside to cool.

The dough is then rolled out into 3 inch squares and 1-1/2 tsp. of the nut mixture is placed in the middle.  Fold the two sides over and pinch.  Dip each kipple in egg white and roll them in granulated sugar.

Bake them at 350 degrees for 20 minutes.

Store in covered containers.  These are best after a few days.

Hi Joyce, I see you are going non-stop. Oh, those lucky neighbors of yours. I love this cookie, I know them as kiffels. I have never made them, but I always buy a few when I see them in bakeries. Love Wegman's version. xo

It sounds to me that you have inherited your mums cooking skills, it must have been hard losing her so young, having her hand writing is such a treasure, such personal memento, to know her own hand wrote the words,
They look delicious. And even better, since you still have your mother's recipe.

Now, why in the world, to I think of Kipple, as being a kind of a drink? Must do a Search on this, to find what drink, I am miss-associating with your cookies.
