I made this cheese bread to go along with the lasagna for the mission. I can't tell you how it tasted because I gave it all away. It sure smelled heavenly though.

Pour 3/4 C. of water into your mixer bowl. Add 2-1/4 tsp. of rapid rise yeast. Add 2 T. sugar, 1-1/2 tsp. salt and 2 T. very soft butter. Mix this together and then add 1/2 C. shredded cheddar, 1/2 C. cottage cheese and 3 T. Parmesan cheese. |
Gradually mix in 3 C. of all-purpose flour. Knead until you have a nice smooth ball. Place it in an oiled bowl and cover and let rise until doubled. This takes about 1 hour. |
Deflate the dough and split it in two. I made a triple recipe but this recipe will give you 2 loaves. Place them in greased loaf pans, cover and let them rise until almost doubled, about 30 minutes. |
Bake them in a 350 degree oven for about 30-35 minutes. Remove them and place them on racks to cool. |
