An Old Fashioned Zucchini Cake



Here is a recipe for a simple old fashioned zucchini/walnut cake. It is dense and very moist and it has cinnamon butter cream frosting.

In the bowl of your mixer, pour 3/4 C. of vegetable oil, 1 C. dark brown sugar, 3 eggs and 1 tsp. of vanilla extract.  Beat until combined.

Add 1-1/2 C. flour, 1-1/2 tsp. baking powder, 1 tsp. salt, 1 tsp. cinnamon, 1/2tsp. ginger and 1/4 tsp. nutmeg. Beat this all together.  Add 1-1/2 C. shredded zucchini and 3/4 C. chopped walnuts.

Pour the batter into a greased and parchment lined 9 inch pan. Bake at 350 degrees for about 45 minutes or until a toothpick stuck in the middle comes out clean.

Cool on a rack.

For the frosting, combine 4 oz. softened butter, 2 C. confectioners sugar, 1/8th tsp. of cinnamon and enough milk to make a spreadable icing.

I place it on a plate with wax paper around the edge to keep the frosting off of the plate.

This shows the consistency of the frosting.

Just pull the wax paper out after frosting.

such a great cake, just like my Mum's recipe, Joyce you are such an adventurist cook, gathering recipes from all the places you have lived and visited all over the world and yet you use the good old gold standards for baking, recipes that have been around for eons, and rightly so because they are tried and tested, true and pure, you are such a great cook.

This is something I can do, zucchini we have plenty of here, I wonder why we don't have pumpkins too since most zucchinis are imported anyway?
We rarely have frosting on cakes either and I can't figure out why, it's so much tastier.

That would be good even without the frosting but wonderful with it!
Zucchini is wonderful in any kind of baking! So moist.
