Grilled Romaine Caesar Salad

This is such a tasty salad.  Grilled romaine is being served in lots of restaurants and for good reason, it's delicious.
I made some anchovy croutons using oil from my jar of anchovies.  Place some cubed bread in a baggy, add the anchovy oil and a few tablespoons of olive oil.  Sprinkle with salt and pepper and some Parmesan cheese.  Toast these in a 350 degree oven for about 15 minutes.

You can use a grill pan or your outdoor grill to seer the romaine.  Cut a head of romaine in half, brush it with olive oil and cook it until it browns.

You will get seer marks across the romaine.

Drizzle it with Caesar dressing, crumbled blue cheese, red onion, halved cherry tomatoes, crumbled bacon and the croutons.  Sprinkle it with Parmesan cheese.

Comments

Never had grilled romaine. But I know that lightly sauteed bok choy is delicious so I'm sure that grilled romaine is too, as you say.
