A Spring Salad

I have been getting wonderful lettuce in my CSA and this a great way to use it.   I add fresh berries, red onions, pickled egg and beet slices and cherry tomatoes.
 Sprinkle it with feta cheese and some pecans.


 Drizzle it with poppy seed dressing.

Poppy Seed Dressing Recipe:

1/3 C. white vinegar
1/2 C. sugar
1 tsp. kosher salt
1/4 tsp. black pepper
1 tsp. Dijon mustard
1 large green onion
1/2 C. vegetable oil
1 tsp. poppy seeds

In a food processor or blender, place the first 6 ingredients and pulse to blend. With the motor running, slowly pour the oil into the mix until it thickens. Pour into a pitcher and stir in 2 tsp. of poppy seeds.

That just made my mouth water! I will have to try your dressing - I tend to get in a rut and need something new and exciting. I eat salads every single day.

Hi Joyce...I made a salad similar to this for Mother's Day Dinner...always so pretty and a family favorite. oh, that looks delicious! I was copying down the dressing recipe, and reading directions - and I noticed it didn't mention what to do with the green onion - do you puree that with the first 5 ingredients before adding the oil?
