Brazilian Meatloaf: Bolo con Carne Alemao

This was another entree that I made for the party the other day.  The Blog Tech said that this was one of the best things he has ever tasted.  If you like meatloaf, this is probably the tastiest one you could ever eat.  Hard boil 4 eggs and fry 8 pieces of bacon. Combine 2 pounds of ground beef with 1/2 pound of chorizo sausage.  Add 4 diced garlic cloves, 1 medium diced onion, salt and pepper, 2 tablespoons of tomato paste, 2 eggs, 1-1/2 cups of bread crumbs and 4 beaten eggs.  Mix thoroughly.  Cook a small piece and taste it and adjust seasoning if necessary.
Divide into four equal pieces.  Flatten each piece into a disk.

Place a hard boiled egg in the center of each disk.

Mold the meat around the egg into an oval loaf.  Bake in a 475 degree oven for 15 minutes.  Remove from the oven and sprinkle with the diced bacon.  Return to the oven for 10 more minutes.

Let them sit for a bit before serving so they are easier to carve.
 Serve with chimichurri sauce.

Isn't that the same basic idea as a Scotch egg?

I think I'll make these - I love something with an egg in the middle like this. Thanks for the recipe.

Funny, meatloaf was mentioned in Shame the Devil by George Pelecanos, which I am reading at the moment. It made me long for some meatloaf, although I haven't ate any in years, decades even.

Oh and this reminds me scotch eggs a bit.

This looks delicious! Do I need to add 2 boiled eggs along with 4 beaten eggs and the other ingredients?

you hard boil four eggs to wrap the meat around. two raw eggs are added to the meat as a binder.

Without the egg in the center, we make a similar meatloaf with chorizo. This looks delicious!!!! I will add this to the list of must try!

Wow! This is very intriguing. You have been cooking up a storm. You were/are a chef, aren't you?

Sounds interesting. The flavors enticing. My husband dated a Brazilian woman before he met me. Wonder if she cooked for him. I'm afraid to ask? If the way to a man's heart is his stomach, with food like this he should have never left.
