This was another entree that I made for the party the other day. The Blog Tech said that this was one of the best things he has ever tasted. If you like meatloaf, this is probably the tastiest one you could ever eat. Hard boil 4 eggs and fry 8 pieces of bacon. Combine 2 pounds of ground beef with 1/2 pound of chorizo sausage. Add 4 diced garlic cloves, 1 medium diced onion, salt and pepper, 2 tablespoons of tomato paste, 2 eggs, 1-1/2 cups of bread crumbs and 4 beaten eggs. Mix thoroughly. Cook a small piece and taste it and adjust seasoning if necessary. |
Divide into four equal pieces. Flatten each piece into a disk.
Place a hard boiled egg in the center of each disk.
Mold the meat around the egg into an oval loaf. Bake in a 475 degree oven for 15 minutes. Remove from the oven and sprinkle with the diced bacon. Return to the oven for 10 more minutes.

Let them sit for a bit before serving so they are easier to carve. |
Serve with chimichurri sauce.
