This is a quick post because I am cooking a Brazilian feast. I will show it in the coming days. I have never eaten much Brazilian food before and I am finding it to be a new favorite. Teaching myself these new recipes is very exciting. This is my banana bread recipe that I have shown before though here I have made individual ones and topped them with coconut. These will be a good accompaniment to the main meal. These would actually be good anytime.
- 3-4 ripe mashed bananas
- 1/2 C.softened butter
- 3/4 C. brown sugar
- 3/4 C. white sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 C. buttermilk
- 2 C. flour
- 1 tsp baking soda
- 1/2 tsp. salt
- 1/2C. chopped walnuts
- Place all of the wet ingredients into the bowl of your mixer and beat until blended.
- Beat in the salt and baking soda.
- Change to your paddle attachment and add the flour mixing until just blended. Mix in the nuts.
- Pour into two greased loaf pans.
- Bake at 350 for 45 minutes or until a toothpick stuck in the middle comes out clean. Let cool before removing from the pans.
