Individual Banana Coconut Breads

This is a quick post because I am cooking a Brazilian feast.  I will show it in the coming days.  I have never eaten much Brazilian food before and I am finding it to be a new favorite.  Teaching myself these new recipes is very exciting.  This is my banana bread recipe that I have shown before though here I have made individual ones and topped them with coconut.  These will be a good accompaniment to the main meal.  These would actually be good anytime.

  • 3-4 ripe mashed bananas
  • 1/2 C.softened butter
  • 3/4 C. brown sugar
  • 3/4 C. white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 C. buttermilk
  • 2 C. flour
  • 1 tsp baking soda
  • 1/2 tsp. salt
  • 1/2C. chopped walnuts
  1. Place all of the wet ingredients into the bowl of your mixer and beat until blended.
  2. Beat in the salt and baking soda.
  3. Change to your paddle attachment and add the flour mixing until just blended. Mix in the nuts.
  4. Pour into two greased loaf pans.
  5. Bake at 350 for 45 minutes or until a toothpick stuck in the middle comes out clean. Let cool before removing from the pans.
*  For this recipe I left out the walnuts and topped the batter with coconut.  If the coconut browns too fast, cover the tops with a piece of tin foil.  I baked mine in mini panettone  cups which I think you can buy at King Arthur Flour.

I've never made an entire banana bread in my life so perhaps this one will be the first I try. I'll go to the store tomorrow and buy some other things so why not bananas and coconut :-)

the coconut is a wonderful addition to this,, and the panetone cups are perfect, I have never saw those anywhere!!

Aside from the coconut, this recipe is sort of similar to the Hawaiian banana bread that people make here. Which reminds me, I haven't had banana bread in a long time.
