This recipe was given to me many, many years ago by a Norwegian witch. It is a family favorite and I always make it for Mabon. It's that time of year. Happy Fall to everyone! I just wish the weather knew that it's fall. |
(***** I am so sorry but when I posted this i left out the 1 tsp. of baking soda so don't forget it!) Peel and dice enough apples to give you 4 cups. I used honey crisps.
In the bowl of your mixer, mix 2 cups of sugar, 3 eggs, 1 tsp. salt, 1 tsp. of baking soda, 2 tsp. vanilla and 1 cup of melted butter. Beat until blended.

Switch to your paddle and mix in 3 cups of flour. |

Add the diced apples and stir them in to the batter. Grease a 9X13 pan and spread the batter in it. Bake the cake at 325 degrees for about 1 hour. Test it with a toothpick. |
During the last ten minutes of baking, make the sauce. Melt 2 sticks of butter.

Add 1 cup of dark brown sugar. |

Add 1/3 cup of cream. |
|
Bring it to a rolling boil and cook for 3 minutes. |

Pearce the cake all over with a skewer. |
Pour the caramel sauce over the cake.
Let it sit until the sauce soaks in. I can't show you a cut piece because I am giving this away.
