Tuna Salad Sandwich

Sometimes the basics are the best.  Good tuna salad on homemade bread is delicious for lunch.
 I put hard boiled eggs in my tuna salad.  This time I used some fresh dill that is still growing in my garden.
  I used two cans of tuna, 1 minced onion, several stalks of celery and 4 eggs.  Sprinkle it with 1 tablespoon of fresh lemon juice.

  I've tried every way I've read about to boil eggs that are easy to peel.  I still have problems with them.  Recently I read that you should add your eggs to boiling water rather than bringing them to a boil in the water. It worked perfectly.  The shells fell off of the eggs.

 I add a small amount of mayonnaise because I don't want the sandwiches to be soggy.

 Mix it thoroughly.

 The bread.

 I place crisp romaine on both slices of bread to keep the salad from soaking into the bread.

A good old fashioned tuna salad sandwich.

Well, Joyce, I learned a trick from my much younger niece - she told me to steam my eggs for 20 minutes and they would peel very easily. I tried this and I will never boil eggs again! Simply steam them, crack the big end and use a spoon to start peeling them - shell comes off almost whole! I told her she had taught an old dog a new trick. Try it!

Too long since I had tuna salad and I like it with eggs in it too.

The fresher an egg is the harder it is to peel, nothing seems to help when the eggs are totally new, the shell sits like glued :-)

I wish David liked tuna sandwiches. He must have had someone make him a nasty one because he refuses to even try mine. *sigh*

I also steam my eggs, put them in a steamer basket over boiling water for fifteen minutes, then plunge into cold water and crack the shells. I have never had one not peel easily, even very fresh eggs! Give it a try!
