I used two cans of tuna, 1 minced onion, several stalks of celery and 4 eggs. Sprinkle it with 1 tablespoon of fresh lemon juice.
I've tried every way I've read about to boil eggs that are easy to peel. I still have problems with them. Recently I read that you should add your eggs to boiling water rather than bringing them to a boil in the water. It worked perfectly. The shells fell off of the eggs.
I add a small amount of mayonnaise because I don't want the sandwiches to be soggy.
Mix it thoroughly.

I place crisp romaine on both slices of bread to keep the salad from soaking into the bread.
A good old fashioned tuna salad sandwich.

The fresher an egg is the harder it is to peel, nothing seems to help when the eggs are totally new, the shell sits like glued :-)
