Quick Chicken Noodle Soup

This soup took less than 30 minutes to make the other day.  I used homemade chicken stock but you can use whatever you prefer.
 I sauteed a medium onion in a bit of oil and then added 8 cups of chicken stock.  I added 1 package of chicken demi glaze.  I also added a few pinches of saffron which really gives it a wonderful flavor as well as a rich color.

 Thinly slice 3 large carrots and add them to the stock.

 Bring it to a boil and then turn it down to a simmer.

 Add 1 pound of pasta, I used spirals.

 Cook until the pasta is al dente and add 3 T. of fresh dill.

 Taste it and season it with salt.  Kids love this soup.  Especially my 30+ year old kids.

Chicken noodle soup is perfect on cold winter days. So easy to make and still so yummy!

This just might be a soup that PH would eat. Not a soup person..and I've never heard of anything like that! Imagine!! :)
