Butter and Parsley Poached Potatoes

 Remember when I harvested my potatoes recently?  Well, this is what I turned some of them into.

 Butter poached potatoes with parsley.  My mom used to make these when I was little and I loved them.  Here's the recipe:

2# new potatoes cut into cubes
1/2 C. butter
1/4 C. water
1 tap. sea salt
1/2 tsp. pepper 1/4 cup chopped fresh parsley.

Mix together everything except the parsley and bring it to a boil.  Turn it down to low and simmer for about 30 minutes until the potatoes are tender.  Toss them around occasionally while cooking.  Mix the parsley in just before eating.

There's nothing so delicious as little baby new potatoes, served simply. SO GOOD!

Going right from garden to pot sure makes a difference! This is my favorite way to eat potatoes. Besides mashed, baked and fried.
