Grilled Greek Chicken

I'm really enjoying cooking outside this Summer. I made this chicken for my kids yesterday and it couldn't be easier.  Just pound out some chicken breasts, marinate them for 24 hours and throw them on the grill.

Ingredients:

  • 1 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 2 Tbsp Dijon mustard
  • 2 Tbsp dried oregano
  • 2 tsp dried parsley
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1 tsp dried rosemary
If you want a sweeter marinate, add a 1/4 C. of honey.

You can use this on any kind of meat.  It would be great with lamb.  I served this with a big Greek salad and Tzatziki.

Chicken isn't fattening when you look at the picture. Who knew. I'll have to try this recipe.

I'm boiling chicken almost every day now so it isn't at the top of my list to eat at the moment :-) but it does look yummy!

Have a great day!

That's how I make almost everything minus the rosemary and usually I add a little honey. This surely is Greek..

More summery food! You make me hungry. All I want is for summer to be here so I can finally enjoy some proper summer food with the right weather and temperature.
