Grilled Greek Chicken

I'm really enjoying cooking outside this Summer. I made this chicken for my kids yesterday and it couldn't be easier.  Just pound out some chicken breasts, marinate them for 24 hours and throw them on the grill.

Ingredients:

  • 1 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 2 Tbsp Dijon mustard
  • 2 Tbsp dried oregano
  • 2 tsp dried parsley
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1 tsp dried rosemary
If you want a sweeter marinate, add a 1/4 C. of honey.

You can use this on any kind of meat.  It would be great with lamb.  I served this with a big Greek salad and Tzatziki.

Chicken isn't fattening when you look at the picture. Who knew. I'll have to try this recipe.

That's how I make almost everything minus the rosemary and usually I add a little honey. This surely is Greek..
