Stuffed Chicken Breasts

I made these for my kids yesterday and my daughter said they are so good that she could eat them every day.  Start out by pounding out 4 chicken breast until they are about 1/4 inch thick. I doubled this recipe.
 Place 4 ounces of cream cheese and 1/2 C. sour cream in your mixer bowl.  Wilt 10 ounces of spinach, squeeze out the moisture and cut into pieces and add it to the bowl.  Add 8 diced, cooked bacon strips, 2 grated garlic cloves, S&P, 1/2 cup shredded havarti cheese and 1/2 C. shredded mozzarella.  I also added some diced sun dried tomatoes.  Mix until combined.

Spread some of the mixture over each piece, roll them up and secure them with toothpicks. Brown them in a bit of oil in a heavy pot and then place them on a baking sheet.  I poured a few splashes of white wine in the pan to loosen up the bits on the bottom and whisk in a knob of butter to make a sauce.

Bake for about 20 minutes until the cheese is oozing out and the chicken is cooked through. I served these with garlic butter spaghetti squash.

Winnie is not sure which toy to play with first.

She will ignore all of them if I just give her a treat.  This is definitely her 'do you have a treat for me" face.  It's hard to not give her one every time she looks at me this way but I don't want a porker puppy.

this is a seriously good recipe. comfort food at it's best. my mouth is watering. winnie has a face to melt your heart. it must be hard not to indulge her.

Oh. My. I am making this recipe, tripling it and eating it all myself. I think Winnie needs a separate bed for her toys.

Lol, that "do you have a treat for me" face resulting in two very porker pug puppies back in the late 90's! Bad fur-mommy...I had to put the poor things on diets lol...Winnie is such a cutie Joyce. :) And the chicken looks great, I like anything stuffed with cheese! :)

How can you refuse that cute look! I do the same thing with my puppy. Have you tried baby carrots as treats with less calories? My dog loves them.
