I made this recipe for The Blog Tech and his wife last night. It's a great way to dress up a meatloaf.
Take 1 pound of ground beef and mix in 1 cup of breadcrumbs, 2 eggs, 1 T granulate garlic, 1 tsp. black pepper and 1 tsp. of salt. Mix this thoroughly and spread it into an even rectangle on a foil covered cookie sheet.
Top it with a layer of provolone cheese and ham.
Add a layer of spinach. You can use frozen or fresh.
Roll this into a loaf and seal the edges by pinching the meat. Cover the entire loaf with strips of thin cut bacon. I missed taking a pic of it.
Bake it at 400 degrees for about an hour until the internal temperature reaches 165 degrees on an instant read thermometer.
Let it rest for 10 minutes before slicing.
