It's only been three days in quarantine and I'm already stir crazy. I'm sure everyone will feel the same sooner or later. To fill an hour yesterday, I made my husband a quarantine cake aka Appalachian skillet apple cake.
Ingredients
- 1 stick unsalted butter softened
- 1 1/4 cup granulated sugar divided
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/3 cup all-purpose flour
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sour cream
- 3 small honey crisp apples peeled, cored and sliced thinly
- 1/2 cup pecans chopped
- 2 tbsp bourbon
Instructions

Preheat oven to 350 degrees. Spray a 9-inch cast iron skillet with cooking spray and set aside.

Toss the apples and pecans with the bourbon and set aside.

In the bowl of a stand mixer, whip together the butter and 1 cup of the sugar until pale and fluffy, 3 - 4 minutes.

Add the eggs and vanilla and beat until smooth.

In a medium bowl, whisk together the flour, baking powder and salt.

Add the flour mixture and sour cream to the batter and beat on low until a smooth batter forms.

Fold in bourbon soaked apples and pecans. Spread the batter in the prepared skillet.

Sprinkle the remaining 1/4 cup of sugar evenly over the top of the cake batter.

Bake until a wooden pick inserted in the center comes out clean, 35-40 minutes. Let the cake cool in the skillet.
My husband found these tucked under the bathroom sink. It felt like finding a hundred dollar bill.

What am I doing? Stack of books. Daily walk. Reading the news too much. I have a mental list of things I can get to that I haven't like some boxes of stuff we brought when we moved here almost 4 years ago. I can clean out some files. Organize the crafts. Do crafts. Worry!

I would love to have the option to self quarantine for my family's safety...I might be young and healthy, but my parents are at risk. I have to weigh keeping a roof over my head vs taking a very nasty flu home with me daily!
On a side note, I blogged tonight about a cake too.
We have an eBay store where we sell antique and vintage items so hopefully folks will continue to buy things!
Meanwhile - we clean, we wash everything and are hoping for some sunny days so we can work outside in the garden on several projects!
