Quarantine Cake

 It's only been three days in quarantine and I'm already stir crazy.  I'm sure everyone will feel the same sooner or later.  To fill an hour yesterday, I made my husband a quarantine cake aka Appalachian skillet apple cake.


Ingredients

  • 1 stick unsalted butter softened
  • 1 1/4 cup granulated sugar divided
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/3 cup all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sour cream
  • 3 small honey crisp apples peeled, cored and sliced thinly
  • 1/2 cup pecans chopped
  • 2 tbsp bourbon

Instructions

  1. Preheat oven to 350 degrees. Spray a 9-inch cast iron skillet with cooking spray and set aside.
  2. Toss the apples and pecans with the bourbon and set aside.
  3. In the bowl of a stand mixer, whip together the butter and 1 cup of the sugar until pale and fluffy, 3 - 4 minutes.
  4. Add the eggs and vanilla and beat until smooth.
  5. In a medium bowl, whisk together the flour, baking powder and salt.
  6. Add the flour mixture and sour cream to the batter and beat on low until a smooth batter forms.
  7. Fold in bourbon soaked apples and pecans. Spread the batter in the prepared skillet. 
  8. Sprinkle the remaining 1/4 cup of sugar evenly over the top of the cake batter.
  9. Bake until a wooden pick inserted in the center comes out clean, 35-40 minutes. Let the cake cool in the skillet.


My husband found these tucked under the bathroom sink.  It felt like finding a hundred dollar bill.

I'm in quarantine, too. Only the second day and already feeling it. Now I see why all these Trumpsters are adamant that the flu is worse and this is a Democratic conspiracy. Idiots.

The cake sounds awesome! My work doesn't involve working with people (our business is hot tubs and pools, and I do servicing--very solitary and tranquil). Plus my hands are in chlorine all day long, so I'll do my normal route. I have some elderly people as clients, so I'll be checking in on them. We live in a tourist destination, so it will be interesting how this plays out this summer. As it is, my husband and I will be stocking our liquor cabinet before we binge on TP.

My brother visited from Missouri (R). He laughed at my precautions, said the media is hyping covid and that it will be all over after the election! THIS is the biggest threat, right along with the virus. 45's base won't be changed.

First case in our county reported yesterday. Daughter in Buffalo said first 3 announced there. Daughter in NH has had them fairly close to their town for several weeks now.
What am I doing? Stack of books. Daily walk. Reading the news too much. I have a mental list of things I can get to that I haven't like some boxes of stuff we brought when we moved here almost 4 years ago. I can clean out some files. Organize the crafts. Do crafts. Worry!
Congrats on the Clorox wipes -- SCORE! I'm getting lots of little chores and jobs around the house done. So there's that.
Nothing is closed and the corona alarm at work turned out to be nothing more than a common cold :-)

If everyone would just stay home, this would all be over quickly. But, let's see.... that might hurt the economy.... so I guess they have to weigh dead people vs. the economy!!!

I work at a grocery store...the official line is no punishment for staying home if you're sick. Everybody else just has to work extra without you there. After working more than 80 hours between my last day off and the next one, I am desperate for some kind of break. Customers have been rude and demanding, the warehouses are running out of stuff to send us, and my hands are cracked and bleeding from all the sanitiser and lysol.

I would love to have the option to self quarantine for my family's safety...I might be young and healthy, but my parents are at risk. I have to weigh keeping a roof over my head vs taking a very nasty flu home with me daily!

I cleaned my pantry back in January and restocked the staples I like to have on hand. In three weeks we may have a few odd combinations, but we will be good. My daughter has chickens, and they are laying after taking a few winter days off, so I have a supply source for eggs. I’m trying to use up what is laying around before baking new, but I am going to try that cake fairly soon, looks so yummy! I completed putting two quilts together last week Friday, the blocks have been laying around for a long while. I made binding for three small quilts and got it sewn on, ready now for handwork. I’m not looking at this as quarantine, it will be fabric stash busting days. I work in a high school, we are on spring break now with two additional weeks added on. My job requires me to walk a minimum of 5-7 miles daily, I am going to have to bundle up and take walks outside to offset the lack of steps. A stash of books to read, a dirty house to clean, if the weather clears, perhaps some garden prep? I’m looking forward to time at home!
Apples seemed just the right comfort food. I made am Apple Betty. I might make one of yours, too.

Cleaning, re-organizing and re-doing drawers, closets etc. all around the house! Playing music, watching lots of BBC shows like "Rosemary & Thyme" - a mystery series with two women gardeners, gorgeous gardens and homes and settings! Re-reading many of my favorite books. And making chicken soup (made the stock yesterday) with red lentils today!

We have an eBay store where we sell antique and vintage items so hopefully folks will continue to buy things!

Meanwhile - we clean, we wash everything and are hoping for some sunny days so we can work outside in the garden on several projects!

that cake looks mighty tasty. i bet your hubby really enjoyed every bite. love the name too. quarantine cake. i hesitate to say it was perfect name given someone elses use of the word perfect, though.

I love skillet everything and that cake looks great! I have to be on the lookout for a cast iron pan after the move.
