I made a pate' brisee dough recipe for the crusts. You roll out the dough and cut rounds and mold it into muffin tins.
I used my large round cutter to make the bottom crust.
Then I filled them with mincemeat.
I used a smaller round cutter for the tops.
They bake at 350 degrees for about 1/2 hour or until turning golden.
After they cooled, I sprinkled them with powdered sugar. When you are ready to eat them you warm them and top them with hard sauce. Lots of people don't like mincemeat but I make mine with fresh oranges and lemons, diced apple and high quality ingredients so it is very yummy! I also only use a bit of port in it so it isn't very boozy at all.
