Polish Kolaches

I made these for my daughter to take to work the other day.  It's amazing how people that work in restaurants appreciate it when you feed them.  They can't eat the restaurant food and they don't make much money and they work long hard hours.  They are always hungry!
Kolaches are so good and they are easy to eat when you are on the go. They are great for tailgating too!  Start by using your favorite sausage.  These are Johnson smoked brast but you can use what you want.  Even hot dogs are good in this recipe.

Ingredients:

  • 2-1/2 tsp. rapid rise yeast
  • 1/4 cup water
  • 2 cups plus 1 tablespoon milk
  • 1/2 cup softened butter
  • 1/4 cup sugar
  • 2 tablespoons salt
  • 3 eggs
  • 6 1/4 cups all-purpose flour
  • 'Everything' bagel topping
Mix the dough until you have a smooth ball.  Let double.  Roll the dough out and cut into 4 inch squares.

Place a sausage on each square.

 Fold in 2 ends.

Roll the dough around the sausage.

Place on a parchment covered cookie sheet and brush with 1 egg mixed with 1 tablespoon of water.  Sprinkle with the topping.  You can make them plain or top with sesame seeds or poppy seeds.

 Let them rise until doubled.

Bake at 400 degrees for about 15-20 minutes until golden.  Cool on racks.

You can serve these with mustard or ketchup on the side. We like to use horseradish.

I sent them a jar of homemade pickles to go with them.

Hi Joyce :) I really like this recipe. Alex LOVES pigs in blankets, but the nitrites in the hot dogs really get to his stomach. I've been looking for a way to make something better with our favourite European style sausages. What a great idea! I love this! I'm bookmarking it and making it this week!! Thanks so much for all the great ideas!! :)

Do you pre-cook the sausages?

I wonder if I could convert this to a GF version? What a bonus that would be for lunches!

no pre-cooking with smoked sausages. if you use raw sausage then i would pre-cook it a bit.

I love Kolaches! New Braunfels is Kolache Land as David calls it. Wurstfest is coming soon and kolaches are made and sold everywhere at that time.

This is a must try!!! Good to know that no pree cocking is needed if the sausage is smoked!

Have a great day!

Christer.

Been following your blog off and on for a couple of years. I just love it. Your pictures are so warm and welcoming. Where do you find the energy to do all this amazing stuff! Watching you get excited about the Fall season and Halloween is like watching a kin anticipating Christmas. I love it!

Oh, I always drool over your Polish recipes! I stopped eating wheat a few months ago so I won't try them, but I'm still tempted to make this recipe for my partner - they look scrumptious!
