I bought some nice vegetables from a local farm market and made some ratatouille to serve on pasta. This is a delicious ratatouille recipe and can be eaten on toast, served with a fried egg on top or eaten on any kind of pasta you like.
This recipe makes about 12 cups so cut it in half if you want less.

It is the most flavorful ratatouille I've ever had. Make sure to use as much garlic as it calls for.
Don't overcook it. See all of the nice big chunks of squash and eggplant? You don't want a bowl of mush.
I served it on bucatini. Throw a few pats of butter and some cracked black pepper on the pasta and toss it around.
Swirl it in a bowl.
Put a large dollop of the ratatouille on top and sprinkle with grated Parmesan and minced fresh basil. Mangia!
