This is my recipe for Journey Cakes. Start with approx. 2 cups of leftover cooked brown rice.
Add one medium grated onion.
Mix in 2 grated carrots, 2 cloves minced garlic, 2 knobs grated ginger, some diced green onions or chives, salt and pepper and 1/2 cup of flour. Mix this thoroughly. Then add two eggs and mix it again. (break 2 pieces off of the ginger...don't use as much as i show in the photo!)
Form into patties and fry on medium in EVOO.
Fry until golden on the bottom and then flip them over.
Drain on paper towels. The finished cakes should match my granite counter top!!!! These can be eaten warm but in true journey cake fashion you really should eat them right out of your pocket!
