A New Giveaway and Great Easter Recipe

I know I have shown this recipe before but it is so good I thought someone might want to use it for Easter. It is a great dish to take to a family gathering. Once people taste this they will kiss and hug you though you probably won't want them to if they are like any of my relatives.

Put about 5 garlic cloves in a food processor.




Add a can of chopped tomatoes. I am using my oven roasted tomatoes instead.


Add one jar oven sun-dried tomatoes in oil. Add the oil too. There's a lot of flavor in it.



Add 3 tablespoon of red wine vinegar. I was out of it so I used apple cider vinegar and 1/4 cup of red wine.


Just pour it in with the rest of the ingredients.


Add 1 tsp. of salt.


And a teaspoon of fresh cracked pepper. Pulse all of this until it starts to become smooth.


Measure out 1 1/4 cup of olive oil.


With the processor running, slowly pour the oil in.


It will thicken nicely and smell wonderful. Set this aside while you prepare the additional ingredients.


Prepare a pound of rotini pasta. I wanted a bit more than a pound and had no more rotini so I used some penne as well.


Drain the pasta and run cold water over it so it stops cooking and is cool to the touch. Then dump it on top of the tomato sauce.


Using a cup and a half of Kalamata olives, slice them in half.


Slice a pint of cherry tomatoes in half and add them.


Add 1 to 1 1/2 cups of grated parmesan cheese.


Slice up a bunch of fresh basil.


Mix all of this together.


Serve it at room temperature with a bit of extra grated cheese and fresh basil sprinkled on top. People go a bit crazy over this dish. It is my daughter's favorite pasta.


Teddy would like to try just a little but mama says no. It would make a puppy sick!

You may notice my new background. Though the pink blossoms were nice and very spring like, my daughter told me that I really am not a pink person. She knows me so well. She said I am more like dirt and mushrooms and moss. We settled on a weeping willow though I am not sure why. I know there is a message in there somewhere!
