The Best Caramel Apple Pie

It's that time of year again!  Caramel apple pie time.  This is such a good recipe I just must post it again for anyone new to the blog that hasn't tried it yet.

Prepare or buy your favorite pie crust.  I make a pate' brisee for mine.

I tripled the crust recipe since I was making a bunch of pies.

Roll out your dough and spray your pie plate with cooking spray.

Fit the dough into the plate.

Peel a variety of apples.  I used Gala and Goldens.

Slice the apples in uniform pieces.  Fill your crusts with just plain apples.

Roll out more dough and cut it in long strips.

Make a lattice top for the pie.

In a heavy pan melt 1/2 cup of butter. Stir in 3 T. of flour and whisk it for a few minutes. Add 1/4 C. water, 1/2 C. white sugar and 1/2 C. of dark brown sugar. Bring this to a boil, whisk it a bit and then let it simmer on low until ready to use. This mixture is enough for one pie.

Slowly drizzle the caramel through the holes on all of your pies.

Bake them in a 450 degree oven for 15 minutes and then lower the oven temperature to 350 and continue to bake for another hour.  As you can see on the lower right pie, the filling should be bubbling when the pie is done baking.

Let cool before cutting!
