Asiago Bread

I made this bread for the first time yesterday and wow...this is a really good recipe!   I doubled it to make 2 loaves.  I'll give you the recipe for a single loaf.
 These really expanded while cooking so if you make 2 loaves you might want to put them on individual cookie sheets so they don't touch.

  • 3 1/4 cups all-purpose flour
  • 2-1/2 tsp rapid rise yeast
  • 1 1/2 teaspoons salt
  • 1 teaspoon sugar
  • 1 egg
  • 1/4 teaspoon black pepper
  • 1 1/4 cups milk
  • 2 tablespoons butter
  • 1 1/2 cups shredded Asiago cheese, divided
  • 1 beaten egg for brushing the loaf

 Mix everything together reserving 1/2 cup of the cheese, knead and place in a buttered bowl.  This is a sticky dough so don't be tempted to add more flour. Cover and let it rise for 2 hours.  It rises slowly but really expands while baking.  Form it into a loaf and place it on parchment paper on a cookie sheet. Let it rise about 30 minutes.  Brush the loaf with a beaten egg and sprinkle it with the remaining grated cheese.

Bake it at 375 degrees for about 30 minutes until golden.  Cool on a rack.
