Easy Chocolate Crack

Plans change and I always try to be ready when they do.  I cooked all day yesterday preparing sauce to make lots of lasagna for the kids and for a family in the community.  Just as I was finishing the sauce, I was informed that the kids will only be at the center for a short period of time since they are being taken to check out a trade school. So, today they need a quick snack to eat on the way.  Chocolate crack was the answer.  It is easy to make and everyone loves it.  It's called crack because when it is finished, you crack it into pieces.  Plus, it's addictive!
 Spray some cookie sheets with cooking spray and line them with plain matzo crackers.  You can buy these in the kosher section of your grocery store. One box of matzos makes two trays.

 In a heavy pot, melt 2 sticks of butter with 1 cup of brown sugar.  I used dark and light brown sugar because that is what I had on hand.  The recipe calls for light brown sugar. Bring it to a boil over medium/high heat.  Once it boils, do not stir and cook it for 3 minutes.

 Pour it over the crackers.  You will need a pot of this for each tray.  Place the cookie sheets in a 350 degree oven and bake for 15 minutes.

As soon as you remove them from the oven, sprinkle 2 cups of the chips of your choice over the top.  I used semi sweet chocolate chips but you can use white chocolate, peanut butter, mint, etc..  Let them sit for a few minutes until they soften and then spread them over the crackers.  You can also sprinkle them at this time with chopped nuts or other toppings.  Set them aside to cool.
 When you are ready to serve them, loosen them with a spatula and break them into single serving size pieces.

Make lots of them, they disappear fast. They taste like the best toffee.
