Eggs Poached In Tomato Sauce on Toast

I'll show you something I made with the bread I baked the other day.
I saw a version of this on a blog I follow and thought I would try it out.  Eggs poached in tomato sauce and served over toast.You can check out their recipe here: http://twomenandalittlefarm.blogspot.com/2013/12/tomato-poached-eggs-on-toast-recipe.html

 I sliced some of the bread and brushed it with melted butter and sprinkled it with granulated garlic and some Italian spices. Place it under the broiler until browned.

 Saute some diced garlic, thinly sliced fennel, diced onion and some hot sausage in olive oil.

 Add a couple anchovies.

 Sprinkle some Italian spices over it all.

 I had some leftover beans and greens so I added it to the sauce.

 Taste it and adjust the seasoning.  Break eggs into a small bowl and one by one, add them to the sauce (forgot the pic of this). Cover the pan with a lid and cook until the eggs are poached to your liking.

 I topped the toast with Provolone cheese and stuck it under the broiler until it melted.


 Scoop an egg out and place it on the toast.

Top it with more sauce and sprinkle it with Parmesan.  Thanks twomenandalittlefarm for a great recipe!
