Pumpkin Cheese Ball and Crackers

I have a friend that has little kids and I just love making them treats.  I made this cheese ball for them recently when I went to visit.  Here is the recipe and the step by step instructions:  http://octoberfarm.blogspot.com/2011/09/pumpkin-cheese-ball-recipe.html

I also made crackers.  These are very simple to make, taste wonderful and have no additives at all.  And they are so much cheaper than  store bought.  In the bowl of your mixer combine 4 C. flour, 1-1/3 cup water, 2/3 C. olive oil, 1 tsp. salt and 1 tsp. baking powder.  Mix until you have a smooth ball. No need to knead. Divide the dough into 4 pieces.  Roll each piece out very thin on a piece of parchment paper.  Sprinkle with any herbs you like.  I used diced rosemary and sea salt.  Roll over the herbs with your rolling pin to push them into the dough.

Slice into squares with a knife or pizza cutter.  Don't worry about them being perfect...they are homemade and they should look that way.  Slide them onto a baking sheet. Bake them for about 20 minutes at 400 degrees.  Some should just be turning golden on the edges.

Remove them from the oven and let them cool on a rack.  I wanted mine to be really crisp so I sat them back in the oven on the cooling racks after the oven was turned off. I left them in for about half and hour.

This recipe made 4 sleeves of crackers and a bag of extras for us.  The kids squealed when they saw the pumpkin and they loved the crackers too.
