Carolina Pulled Pork

I made the guys at the shelter pulled pork sandwiches yesterday.  This is so easy to make and the best pulled pork you will ever taste.  I made almost 20 pounds of pork so the pics you see will be for large quantities.  I will give you the recipe to make enough for a 5 pound pork shoulder.

In a bowl, combine 1 T. ground black pepper, 1 T. chili powder, 1 T. smoked paprika, 1 T. salt, 1 T. cumin, 1 T. granulated garlic, 1 T. seasoned salt, 1 T. celery salt and 1 T. onion powder. 

Add 1/4 cup of brown sugar.

Mix this all together.

Unwrap your pork and rub it thoroughly with the spice blend.  Place it in plastic bags and leave it in the fridge for up to 2 days.

OMG...I have turned into my grandmother.  I never knew either grandmother but something tells me they both had one of these.  A NESCO roasting oven.  I always associated these with horrible food.  I bought one of these because my slow cooker is too small to make quantities of food large enough for the shelter. These work anywhere from being a warming unit, a slow cooker, a bread baker and right on up to a high heat roaster.  This is a 20 qt. capacity and cost less than 50 dollars.

This pic is out of order but it shows that when the meat is done, it falls apart when you pull at it with two forks.

When it was time to cook the pork, I placed it in the roaster and filled it half way up the roasts with water and apple cider.  Cover the roaster or slow cooker and set it on low.  Cook it for 10 hours.  Mine cooked longer since the pieces were so big.

Make the Carolina BBQ sauce.  Pour 1/4 C. cider vinegar in a heavy pot.  Add 3 T. dark brown sugar, 1/2 tsp. paprika, 1 tsp. Worcestershire sauce, some liquid smoke to taste, 2 tsp. ground black pepper and some hot sauce to your liking.  Bring this to a boil and stir until the sugar dissolves.  Then stir in 1/2 C. of yellow mustard.

When the pork is done, shred it removing any fat you come across.  Most of the fat has melted away at this point.

Skim the fat of of the leftover juice in the cooker and ladle the juice over the pulled pork.

Pour the BBQ sauce over the meat and mix it all together.  Fabulous pulled pork!  Make sure to make extras because there never seems to be enough.

And if your puppy comes in covered in snow, turn her into the babushka puppy as you dry her off!
