Pierogi Casserole

 I have been making a fire almost every night.

 I'm enjoying every minute of Fall.

 It's really expensive to cook for the after school kids.  I'm trying to be more economical this year and am trying to figure out recipes that I can make which are less expensive, feed a lot of people and are still very very good.  This is one of them.  First, I made a big pot of mashed potatoes with fresh chives, butter, cream cheese and some cheddar cheese.  Add salt and pepper to taste.

 I fried 3 # of bacon and then minced it.

 Boil 2 # of lasagna noodles. Spray a slow cooker with cooking spray and place a layer of the noodles across the bottom.


 Spread a layer of potatoes over them and sprinkle it with some potatoes, bacon and grated cheese.

 Continue to layer, using all the rest of the noodles and potatoes.

Cover the final layer of noodles with sauteed onions.

Top the onions with cheese and bacon.  Set the cooker on 225 degrees and let this cook for about 5 hours.  I can't show the finished dish because it went to work with The Blog Tech.  He said the kids devoured every last bite.  I think this will be a new favorite.  They said it was FIRE!
 I sent along two loaves of rosemary bread with a tub of Amish butter we bought at a festival last weekend. These kids sure can eat!
