Korean Pancakes-Pajun

The Blog Tech and his father were very happy campers when they saw that I made these for their lunch yesterday. These are very easy to make and extremely delicious.
Mix 2 C. of flour with 1-1/2 C. of water, 1 egg and 1 tsp. of salt.  Add 2 cups of shredded cabbage, 2 shredded carrots and a bunch of green onions cut in half and into 2 inch pieces.  Mix this all together and sit it aside while you make the dipping sauce.

Mix 1/2 C. of soy sauce, 1 tsp. fish sauce, 1/4 C. water, 2 T. brown sugar, 1 T. rice wine vinegar, 2 cloves of minced garlic, red pepper flakes to taste, 2 tsp. toasted sesame seeds and 2 T. sesame oil.  Place this in the microwave for 2 minutes until the sugar dissolves.

Use a large spoon and scoop the batter into a pan coated in canola oil and a bit of sesame oil.

Flatten them and cook over medium high heat until crunchy on the outside and done on the inside.
Serve with the dipping sauce on the side. You can substitute rice flour for regular flour is you wish.
