A&P Spanish Bar Cake Recipe

Now for a walk down memory lane.  Who remembers this cake?  If you had an A&P around you long ago, you've probably eaten this cake.  Why it is called Spanish Bar Cake I have no idea but it is one of the best cakes you will ever taste.  And it is very easy to make.
 2 C. flour
1-1/2 C. sugar
1-1/2 tsp. baking soda
1 T. cocoa powder
1 tsp. cinnamon
1 tsp. salt
1 tsp. nutmeg
1 tsp. allspice

Mix the dry ingredients together and set aside.

1/2 C. vegetable oil
2 C. apple sauce
2 eggs

Beat this in a bowl and gradually add the dry ingredients.

Mix in 1 C. of raisins.

Pout the batter into a greased 9X13 pan and bake at 350 degrees for about 35 minutes or until a toothpick stuck in the middle comes out clean.  Turn it out onto a rack and cool completely.


8 oz. cream cheese
4 T. butter
2 tsp. vanilla extract
2 C. confectioners sugar
1/3 C. milk
1 T. lemon juice

Beat this together adding additional sugar to get the right spreading consistency. Divide the cake in half.  Spread the top of the first layer with frosting then add the second layer and cover with frosting.

I like to keep this in the refrigerator.  Seriously, this is one hell of a cake!
