Reubens

There's nothing quite as good as a reuben.  My kids love them so I made them for their lunches today.
Use a good rye or pumpernickel bread.  Spread it with some German mustard.  Lay slices of Swiss cheese on top and then pile on some thinly sliced corned beef, pile a handful of drained sauerkraut on top, another layer of Swiss cheese and then another piece of bread.

 Make some Russian dressing by mixing 1/2 cup of chili sauce, 3/4 cup of ketchup, 2 cups of mayo, 1 tsp. paprika, 1 tsp. cracked black pepper, 1 tsp. granulated garlic and 3 tsp. horseradish.

 Whisk it until blended.

 Add about 5 diced dill pickles. Set it aside for a while to let the flavors blend.

 Melt some butter in a pan and begin cooking the sandwiches over medium heat.

I like to add a weight to press these.
 Once they brown, cool them on a rack.

 I package the Russian dressing separately so the sandwiches don't get soggy.


Two pounds of corned beef made 8 hefty reubens.
