It seems like forever since I have posted a recipe. It has been busy around here but I am still cooking a lot. This recipe was a huge hit around here and so very easy to make.
First you need to roast a head of garlic. Just slice off the top of a head of garlic and place it on some foil. Drizzle olive oil over it, pinch the foil shut and place it in a 350 degree oven for about 40 minutes. After it cools a bit, squeeze each clove out of its skin and dice it up. It should be very soft. Save all of the olive oil too. Dice up some fresh parsley.
In a bit of butter and the roasted garlic olive oil, saute a diced small onion. Add more olive oil if needed. Sprinkle with cracked black pepper and salt.
Add a few tablespoons of half and half or cream. Whisk it around and add 1 cup of chicken stock.
Boil 1 pound of spaghetti until al dente, drain and mix in the sauce.
Serve it with some Parmesan cheese for sprinkling.
