Tuna Egg Salad Sandwiches

 I love tuna salad and I also love egg salad so why not mix them together?  When I make this I always chop my eggs with an egg slicer.  Slice them once and then turn them and slice again and you have perfect uniform pieces to make into salad.

 Tuna salad is a lot like coleslaw, everyone makes it differently.  I like to add small cubes of carrot to mine.  I usually add celery but when I went to pick some, I found that all of mine had frozen.  So, though we have barely had winter, we've had enough to kill my goddamn celery.  I used celery seed instead.  For 4 large sandwiches I used 2 cans of tuna.

 I added 8 hard boiled eggs.

 Add salt and pepper to taste and about 1/2 cup of mayonnaise. I also added about 4 diced dill pickles. I make this on the dry side because I don't want it to make the buns soggy.

 I made these on the ciabatta rolls I baked the other day. I've been getting wonderful lettuce in my CSA box so I used it to line the buns.  Lining the buns with lettuce also helps keep the buns from getting soggy.  I made these for my kid's lunches so they were not eaten immediately.

 I placed 3 big scoops of salad on the bun and spread it out a bit.

And topped it with a different lettuce variety.  Then I forgot to take a pick of the finished sandwich but I was told they were very good. 

It is warm and sunny here today and will be in the upper 50's.  We are being told that winter will arrive tomorrow.  I'll believe it when I see it.  My daffodils are ready to bloom.
