If you make this cake once, be prepared to have it be an ongoing part of your life. Every single person that I have fed this too moans with the first bite and falls in love with it forever. The Blog Tech just ate a huge piece for breakfast and reminded me that this is his favorite cake.
And it is easy!
Start by placing 2 cups of flour in a bowl.
Add 1/2 cup of cocoa powder, 2 teaspoons baking soda and 1 teaspoon salt. Whisk this together and set aside.
In the bowl of your mixer, put 1 stick of softened butter, 2 teaspoons vanilla and 2 cups of sugar. Cream this together. Add 2 cups of boiling water to this mix. Crack 2 large eggs into a bowl and temper them with a few spoonfuls of the hot mixture. Then add the eggs to the mixing bowl. Gradually add the dry ingredients and mix well.
Pour the batter into a 9X13 pan and bake for about 40 minutes until a toothpick stuck in the middle comes out clean.
Set the cake aside to cool.
For the frosting, place 1/2 cup of softened butter in your mixer bowl. Add 1/8 teaspoon of salt if using unsalted butter. Add 2 teaspoons of vanilla extract and 5 tablespoons of milk. Beat in 1 pound of confectioners sugar.
Frost the top of the cooled cake.
If you look closely you can see the flecks of vanilla bean seeds in the icing.
This scrumptious cake is wonderfully moist with an excellent chocolatey flavor. The Blog Tech said it should be called the "it's ok if you make me fat" cake.
