The Best Italian Wedding Soup Recipe

Anyone out there like Italian wedding soup? 
 I had a request to make Italian wedding soup yesterday and I realized I had never made it before.  I will be making it often because everyone loved it.  Start by making meatballs.  I mixed 1 pound of ground beef with a diced small onion, 1 tsp. granulated garlic, 1 egg, 8 crushed crackers, S&P and 1/2 tsp. oregano.  Mix this together thoroughly and set aside.

 Dice about 5 garlic cloves.

 Dice 1 onion.

 Saute them in 2 tablespoons of olive oil.  Sprinkle with salt and pepper.

 Add a large bag of spinach, cover the pot and let it cook down.

 Add about 8 cups of good chicken broth.  I used homemade but you can use store bought. If so, add 2-3 cubes of chicken bouillon. Bring to a low boil.

 Form the meat mixture into small meatballs.

 Drop the meatballs into the soup.

 Add 1 cup of a small pasta.  I used these tiny tubes.  Let the soup cook for 8 minutes until the pasta is tender.

 Mix 2 eggs with 1/4 cup of Parmesan cheese. Drizzle this mixture  into the soup as you swirl it with a spoon.  Serve with extra Parmesan cheese. This s some serious comfort food.
