I made some Turkish roasted peppers and thought, what better to serve them on but focaccia. This is a quick easy recipe.

Place 3/4 C. water in the bowl of your mixer. Add 3/4 tsp. salt, 2 tsp. sugar, 2 1/4 tsp. rapid rise yeast. add 1 T. diced fresh rosemary. Add 2 cups of flour and knead until you have a smooth dough.

Place the dough in a bowl coated with olive oil, cover with plastic wrap and let rise until doubled. It takes about 1 hour.

When the dough has risen, spread it out into a rectangle on parchment paper. It should be rather thin. Let it sit for 20 minutes.

Just before baking, brush the dough with olive oil, press your fingers all over the top of the dough to make little indentations and then crack sea salt over it.

Bake at 425 degrees until golden. Mine took about 12 minutes. Cool on a rack.
